Fenugreek is an annual herb with compound leaves with three leaflets resemble those of clover. The fruits are pods containing ten to twenty seeds angular light brown. The seed, especially when bruised, gives off a characteristic odor: aromatic or strong according to some, unpleasant as others. It is a stock that can be found in broth Maggi, caramel or Zan.

Fenugreek seeds are not widely used in the West but prized in Indian cooking and African. The seeds of fenugreek is very hard, they are ground into stews or bake in a blend of spices like curries, pickles and chutneys. The seed and leaf are ingredients of Indian cuisine where it is called meth. The seed must be roasted or soaked in water before use. It can be incorporated into bread, as in Egypt and Ethiopia.
